Delicious can be difficult to come by at Wesleyan—we love those tiny squares of cake at Usdan, too, but dining hall life gets monotonous fast. Dorm Gourmet is here to help with easy recipes that you can make in your dorm room. All the ingredients are available at Weshop, and you probably have the appliances. (We won’t tell Fire Safety.)
Time: 50 minutes
(4-6 servings)
Just because you’re stuck in a triple doesn’t mean that you can’t make this deliciously French custard. It’s also a less cliché Valentine’s treat than a heart-shaped box of chocolates (hint, hint).
Requires:
Toaster Oven (with tray)
Fridge
Microwave
Large Bowl
Small Bowl
Fork
Mugs (4-6)
4 eggs, separated
1 teaspoon vanilla
4 tablespoons sugar
1 pint heavy cream
pinch of salt
1. Preheat the toaster oven to 350°. Separate the 4 eggs. Put the yolks in the small bowl. Break up the egg yolks with a fork. Stir until blended. No need to whip. Keep the whites for breakfast tomorrow (microwave them for a few minutes with a little salt and pepper for fluffy scrambled egg whites).
2. Mix the sugar and cream in the large bowl. Microwave sugar-cream mixture on high for two minutes. Stir the sugar-cream mixture to make sure that all the sugar has dissolved. Stir in the egg yolks and mix well. Add the salt and vanilla. Stir.
3. Pour the mixture into 4-6 coffee mugs, depending on your desired serving size. Place the mugs into the toaster oven tray. Place in the toaster oven. Fill the tray to the lip with warm water. BE CAREFUL! IT IS VERY EASY TO SPILL THE HOT WATER ONTO YOURSELF OR YOUR ELECTRIFIED TOASTER OVEN.
4. Bake for 30-40 minutes. The custard will still jiggle when removed from the toaster oven. Don’t worry; it will set in the refrigerator. Let the mugs cool a bit and then pop them in the fridge. They will be ready in a few hours, but it is best to chill them over night.
Tips:
* For a single serving, divide the recipe by 4.
* If you have access to a real oven, use it. Place the mugs in a roasting pan or large skillet filled with warm water.
* For an authentic experience, preheat the broiler on your toaster oven or oven for at least 10 minutes. Sprinkle a bit of sugar atop the chilled custard. Heat it under the broiler for 10-15 minutes, until slightly browned. KEEP AN EYE ON THE SUGAR, AS IT QUICKLY TURNS FROM BROWN TO BURNT.
* Try topping with chocolate syrup or fresh berries.
